I love eggs!! Infact eggs are the essential part of our balanced diet.

Eggs are the naturally produced and complete food which are full with nutritious things like vitamins and proteins. Eggs are the excellent source of minerals like calcium, zinc and iron. They contain low calories and fat.

Eggs are the most adaptable ingredient which can be used to make number of dishes. For example, you can use eggs in making dessert items such as puddings, or you can simply scramble or fry the eggs In this article, i am going to share two very easy egg recipes with you that can be served as either breakfast or as an evening snack.

Potato and Egg Sandwich:

One of my favorite recipe...the recipe is very simple and it will be prepared in just 4-5 minutes.

The ingredients required are: egg, boiled potatoes, butter, olive oil, bread, salt and pepper.

You can begin with heating an olive oil in a pan and break the egg and cook for 1 minute. Add some salt and pepper and turn the side. Cook for 1 minute. Take away from the heat and keep separately. Take two slices of bread and apply butter on one side of each slice. Now you can put half of the cooked egg plus thin boiled potato slices between the bread slices. You can add little salt, pepper and few grated cheese. Keep the other half of the cooked egg on top. Keep the filled bread slices in a sandwich toaster with buttered side facing up. Cook for a minute on each side. Your toasted sandwich is ready to eat.

Egg Salad:

To make egg salad, you will need:

6 eggs, 2 boiled potatoes, 1 capsicum, 1 onion, 1 tomato, 2tsp lemon juice, chopped coriander leaves, salt plus pepper to taste.

To make the egg salad, first you need to cut the eggs into halves. Take away the yolk from the egg and mix it with boiled potatoes. Add salt, pepper, lemon juice and chopped fresh coriander leaves. Stuff the egg whites with this prepared mixture. You can serve the egg salad along with thin strips of onion rings, chopped capsicum or tomatoes.

Since egg is a very versatile food item, you can experiment and come up with different types of dishes from it.
